Are you sure that BOINC gets closed down as well? Or is it just that you lose all your icons in the system tray? Because that is what normally happens when Windows Explorer gets that error. If you check in Task Manager, I'm sure BOINC and Einstein are still continuing.
The only way I know around that is to log off and log back on, or reboot the system.
To prevent that Windows Explorer breaks, you may want to repair Internet Explorer. (If that sounds strange, blame Microsoft for integrating everything. ;))

Check for Spyware and Viruses. Explore is a common thing they like to go after, to grab your keystrokes, and information from your system.
Also think about installing a different browser for Web based browsing. Firefox, Opera, and there are a few others. This helps keep some of the Spyware and Viruses from coming in. SOME, not all.
Do you use Outlook/Outlook Express? This is also a major security hole. Find a new e-mail program.
Just some ideas, to help those who decide the Microsoft built in software is the best way to go. People find the holes, and exploit them, because so many machines run these softwares.
