I have been running Seti@home for a long time and thought I would try out Einstein@home as well. It is slowing down Seti and I want to get rid of it. What do I do?

How is it slowing down Seti? Unless you mean that you don't run two Seti tasks, but just one or none, but that's normal. And with Seti's up- & download problems of late, which won't be solved anytime soon, you may want to reconsider and keep this project as a backup.
In any case, if you truly want to get rid of Einstein and do it nicely, open BOINC Manager->Advanced view->Projects tab, select Einstein, click No new tasks, then go to the Tasks tab, select all Einstein work and click Abort. Confirm the aborts. Then return to the Projects tab, select Einstein again then click Update, to report all the aborted work. After that click Remove. Confirm that choice.
By aborting the work and reporting that, you make sure that the work you had will be sent out again immediately to another computer. This way your ex-wingmen don't have to wait for the tasks to time out (go past deadline), before being sent to another computer. It's a courtesy thing.
Of course, if you don't care about courtesy, just select Einstein and click Remove, then confirm.
