I would actually like to be able by preferences to limit the tasks my computer accepts to "only tasks that expire at a deadline more than # number of days in the future". Or is that already possible?

Not directly, but you can set how much work your BOINC should cache. It will then try and do its best to adhere to this, which mostly works OK. If you'Re getting too much work simply reduce the cache size.
In "advanced view / assistants / settings / network usage" they're the settings "minimum work buffer" and "maximum additional work buffer".
