We have this options in the einstein settings:
"Graphics setting: render quality
Warning: requires hardware 3D acceleration! Default value:"
Right now it's in "low" value.
My question is...
what does this option really do?

The E@H apps come with a screensaver or grahics app that is written in Open GL. Some volunteers like the graphics as nice as possible, others prefer to have them only very simple, especially if your graphics card & driver don't support native Open GL acceleration so that the rendering requires a lot of CPU cycles to emulate Open GL.
So this setting is to let you choose the amount of eye candy that is appropriate for your taste and your hardware.
