'Rhizobia' in the soil at the roots are the true key actually, small micro-organisms that 'fix' nitrogen from the air ( it's a hard molecule to split ). But it also helps that 'chloroplasts' can convert carbon dioxide and water in the air to sugars by capturing photons and storing up electronic energy in photosynthetic pigments to then be released at an enzymatic 'focus'.
