how can I disable/uninstall the BOINC screen saver?

Go to screensavers, and instead of BOINC, set None or Blank.

I'm not near an Win XP host at the moment, but you should be able to find it by right clicking on the desktop, or by looking in Control Panel.
(On Win 7 you find the screensaver selection by Right clicking on the desktop, and clicking personalize)

For Windows XP, right-click on the desktop and select 'properties'. Screensavers are the third tab.
If your desktop is as full as mine, you can reach the same place by Control Panel --> Display.

The BOINC screen saver file is slightly more than 1 megabyte big (1,058KB). You must have a very small harddrive if you want to get rid of small files like that.
