Einstein was running fine on my PC until I added seti, that made einstein pause without reason; can't they work together or shall I adjust a setting somewhere to have them both calculating at the same time?

All BOINC projects use your computer's CPU resources very intensively. They would be less efficient if they had to share it with another intensive program running at the same time.
So when you add a second (or third, or fourth...) project - as you've just done - you'll find that the computer works exclusively on one of them for a period of time, then switches automatically and gives its full attention to another project, and so on.
Usually, each project gets to run for an hour before giving way to the next one, but you can change this, and the balance between how much time each project gets, if you want to.

If you have a multiprocessor machine (or HT machine), you can do multiple projects at the same time. It will not always run one of each, because BOINC works on a debt system, and since different projects are different sizes, it may run on longer than the other, because it's debt is too low. It's a pretty complex system.
