Is it possible to change the -really long and difficult- account key after first login? If not -why not?

No, it's a unique identifier for your account and cannot be changed.
But you won't need it very often. When you attach to the project you enter the project URL and the account key (cut and paste works for this) and then the client remembers them from then on. No need to enter it more than once.
When you login to the web pages you can also check the little box to tell it to remember your account key, and then whenever you connect to the website it remembers who you are. (This does not work when you connect from a different computer, but at least it will work for the computer on which you are running BOINC).

Well, this not top secret, however he can mess with my settings...

In some cases, the administrators of the project will take pitty and create a new one for you. I know of one case in S@H where this was done.
