Except when the Developers make a change that a project isn't ready for, then it's not a good idea. I haven't heard of any of that going on this time and I upgraded one of my computers to it with zero problems.

Since BOINC doesn't use the GPU but simply launches the Einstein App which then uses it heavily, it's a bit hard to imagine how BOINC itself could expose a "GPU bug that stalls the computer". Far more likely to be the Einstein App or the GPU driver or a combination of the two.
I see your GPU model is AMD RX 560 - one of the Polaris range. I have quite a few as well, ranging from RX 460 through to RX 580. I run Linux and not Windows but I also used to see lots of GPU crashes which only happened after a couple of weeks of continuous use. That problem was solved a couple of months ago with a driver update. Nothing to do with BOINC at all.
